editing global search workflow

I have a Dropbox folder called "plaintext". It's where I stick everything from notes to myself on a phone call to plain text files that I'm manually converting to a pretty, copy-edited Epub file. It's kinda big... I know for sure it contains in excess of 15mb of text files, and some of the files are over 1mb of just text. So, lots of data. (I haven't looked for exact figures... I could be underestimating the total by a lot)
The global search workflow appears to be searching all the files and sub-folders within "plaintext" if I do a search. This makes sense and fits the name of the workflow. And amazingly, despite my iPad being an iPad mini running iOS 7, it's doing a pretty good job of not keeling over dead on all that data. The search times on absolutely everything are pretty competitive with my laptop for doing the same kind of task. But my laptop works out faster because my laptop usually doesn't look through the entire mess... just in one file.
So, I know exactly what file should contain my search string, the question is where in the giant file. I'm having a tough time working out how to tell Editorial not to check everything. And I'm sure there are a bunch of ways to tell Editorial not to check everything ranging from dirt simple look in this file to handing Editorial a text file of notes exported from iBooks and having it parse that to correct the text of a book. I'm more interested in "just look right here stupid program" than trying to automate everything.
